Go Bananas for this Banana Bread

Homemade banana bread 🍌🍞

1 cup Kamut flour

1 cup Spelt flour
*please note that any all-purpose flour you choose is fine 
1 tsp baking soda
1/4 tsp himalayan pink salt 
1/2 cup ghee (or butter)
3/4 cup honey (or sugar of your choice)
3-4 overripe bananas 
2 eggs beaten
OR
(2 Tbsp ground chia seeds w/6 tablespoons of water for vegan option sub for eggs)
1/2 cup crushed walnuts 

To make:
1) pre-heat oven to 350F
2) combine flour, salt, baking soda and nuts into one bowl
3) in another bowl combine butter and sugar, whip until completely combined 
4) stir in already beaten eggs and banana into bowl with butter and sugar until completely blended
5) grease 9 x 5 glass pyrex or metal bread loaf pan and pour contents in smoothing the top 
6) place in oven for 60-65 minutes, stick a toothpick in to check if doughy in middle and then let cool for 10 minutes.

Chocolate Mousse

Chocolate mousse made from.....avocados! 🥑🥑🥑 
2 ripe avocados
1/2 cup cacao powder 
1/2 cup cashew milk (any milk you want)
1 tsp organic vanilla extract
3 Tbsp cane sugar (or any sweetener you like) 
1/8 tsp salt 
Topped with shaved coconut and strawberry (optional) 
Blend all ingredients together until fluffy 😊👍🏼🌼enjoy!


Did you know that avocado is actually a fruit? It has very high fat content which is unusual for a fruit, but it is only good fats. Avocados are packed with 20 vitamins, minerals and antioxidants such as vitamin K, E, C, B, potassium and lutein. Lutein is a carotenoid that is protective for the eyes. Avocados having more potassium than bananas is helpful in keeping a healthy blood pressure. Since avocados are high in monounsaturated fat (good fat) they help lower cholesterol. Certain phytochemical and compounds in avocados meaning that they contain anti-oxidative properties which is helpful in inhibiting cancer cell growth and can even be helpful for patients who are on chemotherapy with side effects such as fatigue, nausea and weakness. Avocados are high in folate (B6) which is a vitamin really important for women of child bearing age and pregnancy because studies show that folic acid decreases risk of spina bifida and neural tube defect in the baby. Avocado is an anti-inflammatory food by nature which means it can help with many health problems attributed to inflammation such as arthritis, Crohn's, Parkinsons, Ulcerative Colitis etc. The high fat and fiber content of avocados actually helps stabilize blood sugar which can be helpful in cases of diabetes. The high Vitamin C and E content of avocados assists in developing collagen and elastin keeping your skin young and glowing.
